Ingredients:
- 2 cups chopped carrots, zucchini, and bell peppers
- 1 small red onion, sliced
- 2 tbsp 92 Foods Garlic Infused Ghee
- ½ tsp turmeric
- Salt and black pepper to taste
- A handful of chopped parsley or mint
Instructions:
- Preheat oven to 425°F (220°C).
- Toss veggies with garlic ghee, turmeric, salt, and pepper.
- Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through.
