Garlic Ghee Roasted Veggies – A Sheet Pan Wonder

Ingredients:

  • 2 cups chopped carrots, zucchini, and bell peppers
  • 1 small red onion, sliced
  • 2 tbsp 92 Foods Garlic Infused Ghee
  • ½ tsp turmeric
  • Salt and black pepper to taste
  • A handful of chopped parsley or mint

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Toss veggies with garlic ghee, turmeric, salt, and pepper.
  3. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through.
  4. Garnish with herbs and serve as a side or over quinoa for a full meal.
